PALE.
This is applied to white wines with low intensity colours.
PALE CREAM.
This is a sweet wine with the colour of “fino”.
PALE DRY.
This is a “fino” wine.
“PALO CORTADO”.
Intermediary category between “amontillado” sherry and “oloroso”. It has the fragrance of the first and the palate of the second. It is very rare.
PHYLLOXERA.
Species of louse which attacks the roots of the vine. The disease has very severe consequences. At the end of the 19th Century, it spread throughout Europe and California, ruining most of the harvests. It reappeared in the American region during the 1980’s.
POMACE.
Crushed pulp remaining after the pressing of the grapes. After obtaining the wine from the press, the pomace may be used as a base for distilling and producing pomace eau-de-vie.
“PRIVATE RESERVE”.
Name which was used in the past for the best wines of a winery. For want of a true regulation to regulate this and other related terms (such as “proprietor’s reserve”), some wineries use it to qualify fairly mediocre wines. In other cases, and depending on the producer, it can still be used today as a synonym for excellent quality wines.
PRODUCED AND BOTTLED BY.
Indicates that the winery has crushed, fermented and bottled at least 75% of the wine contained in the bottle on which the message of this label featured.
PRODUCED IN WINERY.
Defines a wine which comes from a vineyard which is the property of a winery and which is situated outside the limits of the vine-growing area to which it belongs. RACKING. Operation of emptying the barrel in order to separate the wine from the marc.
