The “triple selection” vineyards, grapes and barrels. First. Each year, the seven best Viñas del Vero vineyards are chosen to obtain our very best grapes. Second. After the initial, discriminating manual harvest in small quantities, the grapes are once more put to the test on the "choosing table". Thrird. Each grape variety then undergoes a separate fermentation process in French Allier oak and the wine obtained is aged in new French oak barrels from four different cooperages. After twelve months, the best barrels are chosen for the final ensemble, which is then placed in barrels for another eight months. Once the ageing process in barrels is finished, it is directly bottled from the barrels without undergoing stabilisation or filtration. The first vintage was 1997 and this wine has an extremely limited production
